If you are using menu to link sitemaps, each menu item should automatically change the language and also the sitemap contents.
The same that happens on demo site: http://demo.storejoomla.org/jsitemap_pro

Each menu has different information for language and generate also sitemap accordingly
http://demo.storejoomla.org/jsitemap_pro/en/ http://demo.storejoomla.org/jsitemap_pro/fr/
...

The same happens when you change language using Falang
