Sure Bob,

the files are contained at this path: yourjoomlaparg/components/com_jmap/views/sitemap/tmpl

You can create a Joomla template override with files contained in this folder and remove the <lastmod> for example from the files:

default_xml_content.php
default_xml_menu.php
default_xml_user.php
....etc....
