Is it possible to choose (include / exclude) keywords in google content ?

If you mean Google SERP you can only manage using title/descriptions of the page. But Google will build the SRP snippet by itself. See here for more info: http://storejextensions.org/faq/why-google-shows-a-different-title-for-my-pages-in-the-serps.html

Google builds by itself keyword scraping your website contents.

Also keywords metatags are no more supported by years.
