when i do this every not published menu is shown but i dont want every unpublished menupoint in sitemap... do i have the possibility to exclude then the points i dont want in sitemap ??
They dont appear in dhe list of menu-points i could exclude ....

Look at the menu data source settings.
In the below part you have a dropdown to exclude every single menu item that you don't want in the sitemap. So you can exclude and include what you want.

The not published menu-points are in the sitemap but not in the list to exclude them...
there are only the menu-points which are published...
how can i get them in the list or exclude them manuell ??

No you can't do that, you are forcing Joomla to show what must not be showed.
Unpublished items must not be showed, all sub-childs will be excluded as soon as you unpublish the parent menu in the Joomla menu.
The only workaround is to create a new menu with alias items poiting to elements that you want to be included in the sitemap.

Could i not manual give a link at the site like https://www.haustechnik-hart.de/sanitaer.html into the sitemap ??
That the site is in sitemap but not in the menu ??

If you want to add links manually to the sitemap create a new menu only for this purpouse not visible on the site, then add items of type 'External URL' specifying links that you want included in the sitemap:
http://www.haustechnik-hart.de/link1.html http://www.haustechnik-hart.de/link2.html
