Hi,
if you are using Joomla 3 the easiest way is to add a language override for the following constant:

COM_INSTANTPAYPAL_OUTOFSTOCK

If you are using Joomla 2.5 you can change it in the language file
root/components/com_instantpaypal/language/en-GB/en-GB.com_instantpaypal.ini
