Yes exactly, for each format that you submit specify different languages, for example 2 for XML and 2 for images:

index.php?option=com_jmap&view=sitemap&format=xml&lang=en
index.php?option=com_jmap&view=sitemap&format=xml&lang=es

index.php?option=com_jmap&view=sitemap&format=images&lang=en
index.php?option=com_jmap&view=sitemap&format=images&lang=es

You submit all required sitemaps in this way.

I suposed I have VM categories and product into xml site:

but in google webmaster I only see 29 web pages (with products should be much more web pages)

If you added at a later time Vm products and categories check if the sitemap is not cached.

Also if you already submitted the sitemap previosly, GWT could have cached it. To force a new fetch of GWT a new link for the sitemap can be used enabling the parameter for random links generation

but can I let it and tomorrow, automatically, GWT will update it?

PS Submit Sitemap to GWT button doesn't work
